New Recipe : Tomato, Basil, and Mozzarela Omelet


Dear Internet,

I had an omelet for dinner that was fabulous!

The recipe came from 15-Minute Low-Carb Recipes. It’s pretty much exactly what it sounds like.

2 Eggs
1/2 Small Tomato
Basil (fresh if you have it, or dried)
Shredded Mozzarela
Other spices as desired

I made the omelet base, and added onion powder, a bit of garlic, and some dried basil so that the egg mixture had it’s own flavor. Then I added the tomato, some more basil, and the shredded cheese before folding.

VERY yummy! Definitely a keeper, and I’m loving the fact that I now like fresh tomatoes, yes I am.
